Ingredients

  • 1 Pillsbury deep dish pie crust
  • 1 can pumpkin puree
  • 3 eggs, separated
  • Sugar
  • Pumpkin pie spice
  • A splash of milk or evaporated milk
  • Pinch of salt

Instructions

  1. Bake your pie crust according to package directions and let it cool.
  2. In a large bowl, whisk the pumpkin, sugar, pumpkin pie spice, egg yolks, milk, and salt until smooth.
  3. In a separate bowl, beat the egg whites until they form soft peaks.
  4. Gently fold the whipped egg whites into the pumpkin mixture. This is the magic step that creates the fluffy, cloud like texture.
  5. Pour the filling into the cooled crust and bake at 350 degrees until set. The center will jiggle slightly but should not be liquid.
  6. Cool completely before slicing.

Classic Chili with Beans

Ingredients:

  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 2 garlic cloves, minced

  • 1 can tomato sauce
  • 2 cans kidney beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions:

  1. In a large pot, brown the meat with onion, garlic, and bell pepper until cooked through.
  2. Stir in tomatoes, tomato sauce, and beans.
  3. Add chili powder, cumin, salt, and pepper.
  4. Simmer on low for 30–45 minutes, stirring occasionally.
  5. Serve hot with shredded cheese, sour cream, and cornbread.

White Bean Chicken Chili

Ingredients:

  • 1 small yellow onion, diced
  • 1 tbsp olive oil
  • 2 cloves garlic, finely minced
  • 2 cans low-sodium chicken broth
  • 1 can diced green chilies
  • 1 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • salt and freshly ground black pepper, to taste
  • 1 pkg Neufchatel cheese (aka light cream cheese), cut into small cubes
  • 1 1/4 cup frozen or fresh corn
  • 2 cans cannellini beans
  • 2 1/2 cups shredded cooked rotisserie or left-over chicken
  • 1 Tbsp fresh lime juice
  • 2 Tbsp chopped fresh cilantro, plus more for serving
  • Tortilla chips or strips, monterrey jack cheese, sliced avocado for serving (optional)

Instructions:

  1. Heat olive oil in a large pot over medium-high heat. Add onion and saute 4 minutes minutes. Add garlic and saute 30 seconds longer.
  2. Add chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne pepper and season with salt and pepper to taste. Bring mixture just to a boil then reduce heat to medium-low and simmer 15 minutes.
  3. Drain and rinse beans in a fine mesh strainer or colander then measure out 1 cup. 
  4. Add Neufchatel cheese to soup along with corn, whole beans and pureed beans and stir well. Simmer 5 – 10 minutes longer.
  5. Stir in chicken, fresh lime juice and cilantro. Serve with Monterrey Jack cheese, more cilantro, avocado slices and tortilla chips if desired.

The Month of August is Tax-Free for Groceries

Many of us have had to make some budget adjustments regarding the grocery portion of our bills lately. The inflation we are currently experiencing has not been seen in this nation in forty years. Not to mention prices at the pump are also at an all-time high.

Governor Bill Lee announced the proposal for a 30-day suspension of local and state grocery sales tax to provide direct financial relief to Tennesseans amidst surging inflation nationwide. The state lawmakers passed the particular item in the budget that suspends sales and state tax on most groceries for the entire month of August, beginning on August 1 and ending at 11:59 pm on August 31st.
