Julia Child Inspired Fluffy Pumpkin Pie
Ingredients
- 1 Pillsbury deep dish pie crust
- 1 can pumpkin puree
- 3 eggs, separated
- Sugar
- Pumpkin pie spice
- A splash of milk or evaporated milk
- Pinch of salt
Instructions
- Bake your pie crust according to package directions and let it cool.
- In a large bowl, whisk the pumpkin, sugar, pumpkin pie spice, egg yolks, milk, and salt until smooth.
- In a separate bowl, beat the egg whites until they form soft peaks.
- Gently fold the whipped egg whites into the pumpkin mixture. This is the magic step that creates the fluffy, cloud like texture.
- Pour the filling into the cooled crust and bake at 350 degrees until set. The center will jiggle slightly but should not be liquid.
- Cool completely before slicing.
