Homemade Hamburgers

2 pounds of grass-fed ground beef
1 egg, beaten such as a Clearly Cage-Free Egg
3/4 cup panko bread crumbs
1/4 cup onion, finely chopped
3 tablespoons evaporated milk
1/4 teaspoon Clearly Organic Paprika
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon Clearly Organic Ground Pepper
8 bakery fresh hamburger buns

In a large bowl mix ground beef, egg, bread crumbs, onion, evaporated milk, paprika, garlic, salt, and pepper. Mix contents with your hands then form hamburger into 8 patties. Preheat and lightly oil grill grates. Grill patties for 5 minutes on each side, or until the meat has reached the desired doneness. Serve on a bakery fresh bun with all your favorite toppings.

Chicken Enchiladas

Chicken Enchiladas

2 Tablespoons Clearly Organic Olive Oil
1 yellow onion, chopped
1/4 teaspoon salt
1/4 teaspoon Clearly Organic Ground Pepper
2 cloves garlic, minced
1 -28 oz. can Clearly Organic crushed tomatoes
2 teaspoons Clearly Organic Cumin Powder
2 teaspoons Clearly Organic Chili Powder
1 can Clearly Organic Corn, drained
2 small cans diced green chiles
1 1/2 pounds cooked chicken, shredded
About 16 corn tortillas
2 cups enchilada sauce, canned
1 1/2 cups shredded Mexican cheese
1/4 cup cilantro leaves

In a large sauté pan add oil and turn heat to medium high. Add onion and cook for 5 minutes stirring occasionally. Place minced garlic in sauté pan and continuing cooking for 2 minutes. Add canned tomatoes, corn and green chilies. Season mixture with salt, pepper, cumin and chili powder. Bring contents to a boil and stir to combine. Reduce heat to medium and let stew for 8 minutes. Remove pan from heat and allow to cool for 5 minutes. Stir in cooked shredded chicken to tomato mix.
Coat the bottom of a 13×9 baking dish with Clearly Organic cooking spray. Spoon in about 1/4 cup chicken and tomato mix into each corn tortilla. Fold tortilla over filling and place in baking dish with the seam side down. Repeat until pan is full. Top with enchilada sauce and cheese. Bake for 20 minutes in a 350 degree preheated oven. Remove from oven and let cool for 5 minutes. Garnish with cilantro before serving. Also goes well served with sour cream and Clearly Organic Salsa.

Can Pasta be Part of a Healthy Meal Plan?

In recent years carbohydrates have been considered friend and foe. During the fat-free phenomenon in the ninety’s, bread and pasta were commonly promoted healthy choices for any meal. Homemade Dark Chocolate

1/2 cup Clearly Organic Coconut Oil
1/2 cup 100% cacao powder
1/4 cup Clearly Organic Raw Honey
1 teaspoon Clearly Organic Pure Vanilla Extract

Slowly melt coconut oil in a small sauce pan over medium low heat. Stir in cacao powder, honey and vanilla. Stir continuously over medium low heat for 2 minutes or until all ingredients are well blended. Pour mixture into candy molds or a parchment lined bread pan to make a chocolate bar. Refrigerate at least one hour or until chocolate becomes solid.

Variations: Add chopped nuts, dried fruit, Clearly Organic Almond Butter, orange zest, Clearly Organic Cinnamon or Clearly Organic Cayenne Pepper to taste. Add variation just before pouring into chocolate mold.

Natural Protein Smoothies

A Clearly Organic customer Kathleen W. wrote in and asked about making an everyday smoothie with extra protein. This is a great question that has multiple answers. There are lots of fun ways to implement a smoothie routine with a wide variety of natural organic foods. Adding protein-based foods to a smoothie helps slow down the digestion process of your meal making you feel full longer. It also helps add thickness and flavor to a fruit or vegetable smoothie.

Here are six natural foods that add protein to a smoothie:

New Food Trends For A New Year

Soft Gingerbread Cookies

INGREDIENTS:
3/4 cup molasses
1/3 cup Clearly Organic Brown Sugar
1/3 cup water
3 Tablespoons Clearly Organic Butter, softened
3 1/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground allspice
1 teaspoon Clearly Organic Ground Ginger
1 teaspoon Clearly Organic Ground Cinnamon

DIRECTIONS:
In a medium bowl or standing mixer, beat together molasses, brown sugar, water, and softened butter. Combine until smooth. In a separate bowl add the flour, baking soda, allspice, ginger, and cinnamon. Stir to combine dry ingredients. Then add the flour mixture to the wet ingredients, one cup at a time, stirring or beating with a mixer to evenly distribute.

Combine all ingredients and form dough into a ball. Cover and chill for at least 3 hours. Preheat oven to 350 degrees. Lightly flour your counter and roll out dough to 1/4 inch thickness. Cut dough with desired shapes and place on a cookie sheet.

Bake for 8-10 minutes then allow cookies to cool on a wire rack. Decorate as desired.

Lemon Muffins

If you love lemon this recipe is for you! These delightful citrus treats are refreshing and delicious. They go great paired with vanilla yogurt and seasonal fruit.

2 cups all purpose flour, sifted
1/2 cup Clearly Organic Sugar
1/4 cup Clearly Organic Sesame Seeds, toasted (optional)
1 Tablespoon baking powder
1/2 teaspoon salt
3 lemons, zested and juiced
1 1/4 cup Clearly Organic Almond Milk
1/2 cup Clearly Organic Coconut Oil, melted
1 large egg
1 teaspoon Clearly Organic Vanilla

For the lemon glaze:
1/2 cup whipped cream cheese, at room temperature
1 cup Clearly Organic Powdered Sugar
1/3 cup lemon juice
Extra zest for garnish

Preheat oven to 375 degrees and line a muffin pan with 12 paper liners or grease with Clearly Organic cooking spray. Whisk flour, sugar, sesame seeds, baking powder, salt and lemon zest from 3 lemons together in a mixing bowl. In a separate small bowl whisk milk, oil, egg and vanilla. Add wet ingredients to the dry and stir to combine. Pour batter into muffin cups and bake for 15 minutes or until toothpick inserted comes out clean.

While muffins are baking prepare glaze. Whisk together softened cream cheese, lemon juice and powdered sugar until smooth. When the muffins come out of the oven poke several holes in each muffin with the toothpick. Then drizzle glaze over the top and let cool for ten minutes. Garnish with lemon zest or a small lemon wedge if desired.

Nothing warms you up like homemade soup

…When you come home from a long day of work or play during this season, nothing quite hits the spot like a bowl of HOT soup. The warmth, the smells, the taste – they all combine for a wonderful dinner. I tried my hand at soup making when the temperature outside was a frigid 9 degrees. Full disclosure – this was my first time ever making homemade soup. But the critics (my family) agreed – tasty!

Turkey Sausage Bean Soup

Ingredients:
1 tbsp Best Choice Olive Oil

3 pre-cooked Turkey Sausage Links

1/2 Raw Onion

1 – 15oz. can of Clearly Organic Great Northern Beans

1 tbsp Clearly Organic Italian Seasoning

1/2 tbsp.Turle Red Pepper

3 cups Best Choice Chicken Stock

1/2 cup of Coleslaw/Broccoli Mix

1 tbsp Best Choice Heavy Whipping Cream

Directions:
Over medium heat, add olive oil, turkey sausage links and onion to large pot. Cook until sausage and onions are slightly browned for about 5 minutes.

Stir in red pepper, Italian seasoning and beans (don’t drain). Add chicken broth, cover and bring to a boil. Reduce heat and let simmer for around 10-15 minutes.

Stir in heavy whipping cream. Once cream is mixed in, add coleslaw/broccoli mix and cook for about 5 more minutes. Salt & pepper to taste.

Serve in bowls and sprinkle parmesan cheese on top (optional).
